OS ESTRANGEIRISMOS E ALGUNS RESQUÍCIOS DA VARIEDADE LINGUÍSTICA ITALODESCENDENTE EM CARDÁPIOS DE RESTAURANTES

Resumo

Os costumes de um povo podem ser observados por meio da culinária, dos pratos típicos, do cotidiano gastronômico da comunidade. Para tanto, Certeau (1996) em seus estudos trata que o comer sempre é bem mais que comer. Nesse âmbito, são revelados não apenas a cultura, mas também aspectos do tempo e do espaço geográfico, assim como questões econômicas e sociais de determinado grupo, os quais podem ser identificados por fatores linguísticos. Os restaurantes étnicos se destacam pela cozinha de um determinado país, assim como das etnias: italiana, japonesa, chinesa, mexicana, libanesa. Em Cascavel, no oeste do Paraná, são encontrados estabelecimentos comerciais de todas as etnias descritas acima. A cozinha italiana, no entanto, se sobressai neste município, tanto com inúmeras pizzarias, como com restaurantes que se autodenominam italianos. Há diferenças, no entanto, da cozinha italiana internacional daquela italodescendente (trazida pelos imigrantes). Com isso, o objetivo é vislumbrar os processos linguísticos (empréstimos e estrangeirismos) e, consequentemente, discursivo-argumentativos e persuasivos, presentes em cardápios de restaurantes cascavelenses, disponíveis na web. Os resultados demonstram que os impactos da globalização se sobressaem sobre a cultura regional italiana, restando apenas vestígios da cozinha italodescendente nesses estabelecimentos.

ABSTRACT: The customs of a people may be noted through its cuisine, typical dishes, the community’s food habits. For that purpose, Certeau (1996) in his studies affirms that “eating always goes beyond the act of eating”. Within this scope, not only culture is revealed, but also elements of  a certain time and geographic space, as well as economic and social issues of a certain group, which may be identified through linguistic factors. Ethnic restaurants attract attention because of the cuisine of a certain country, as well of their ethnic groups: Italian, Japanese, Chinese, Mexican and Lebanese. In the city of Cascavel, located in the Northwest region of Paraná State, there are restaurants of all the aforementioned ethnic groups. The Italian cuisine, however, stands out in such city, not only through many pizza restaurants, but also through restaurants that call themselves Italian. There are differences, however, between the Italian international cuisine and the Italian-descendant cuisine (brought by the immigrants). In light of this, the purpose of this paper is to contemplate the linguistic processes (loanwords and foreignisms), and consequently the discursive-argumentative processes seen in Cascavel’s restaurant menus available on the web. Results show that the impacts of globalization overshadow the regional Italian culture, leading to nothing but reminiscences of the Italian-descendant cuisine in such restaurants.
